Plum Eau de Vie

Damsons are typical of the Alsace region. It is primarily grown in the north, on the foothills of the Vosges Mountains and, more specifically, in Alsace Bossue. These oblong plums have purple to yellow flesh and are very sweet and flavourful. The fruit ripens in early October, when its long, rugged and flat stone is easy to separate. Its eau de vie is produced by distilling the fruit after about six weeks of fermentation.

In the pre-war period, this beverage was considered to be the essential end to a good meal. This eau de vie is robust and full of character, with a slight taste of the stone. It lends itself to many uses in cocktails and mixed drinks, as well as in pastries.
