Wild Raspberry Eau de Vie

This eau de vie is obtained by macerating 8 kilograms of fresh fruit per litre of pure, neutral alcohol, followed by distillation. Wild raspberries are used to make it, meaning a variety that is not usually cultivated. Its taste is more pronounced and tart as a result of the fruit’s pips. It is also more fragrant in the nose and on the palate. Its elegance and great finesse make this a very popular eau de vie. We recommend serving it cold in a pre-chilled glass. This eau de vie is best enjoyed young, about two years after distilling, to preserve the full freshness of its delicate flavours.
